Their goal is to provide fresh, simple ingredients prepared from scratch using authentic flavors and techniques. The chefs use dried Mexican peppers such as Gaujillos, Pasillas, Ancho, Chipotles as well as a variety of fresh peppers and spices that add just the right punch of flavor.
